Vanilla Almond Tea Cookies

4:00 is tea time around Donia Farms, and these Vanilla Almond Tea Cookies pair perfectly with a cup of english breakfast. These sugar cookies are so simple to make. The real star ingredient is our Heritage Butter in both the cookies and the Vanilla Almond Icing. Grass Fed Butter makes all the difference!

They are mild tasting and hit the spot for a little afternoon, pre dinner, pick me up.

The cookies will be very lightly browned on the bottom edeges when they are done – be sure not to overcook them!
Tip:  Use a piping bag to quicly ice the cookies!

Ingredients
  • 1 Cup Donia Farms Sea Salted Butter Softened
  • 1/2 Cup Granulated White Sugar
  • 2 Eggs
  • 1.5 Tsp Vanilla Extract
  • 1.5 Tsp Almond Extract
  • 2 Cups All-Purpose Flour
  • Raw Sugar For Topping

Instructions
  1. Note: This dough is best handled when its cooled. Allow 30 minutes to cool in fridge.
  2. Cream together butter and sugar.
  3. Add eggs to creamed mixture, one at a time. Add both extracts and beat, scraping sides of bowl.
  4. Slowly mix in flour and beat until combined. Dough will be slightly sticky
  5. At this point its best to cool the dough in the fridge for a minimum of 30 minutes for best handling.
  6. Preheat Oven to 375. Roll out dough on floured surface to 1/8 inch thick. When making these cookies to sandwich cookies I like to make them as thin as possible.
  7. Bake at 375 for 2 minutes. Remove from oven and top with raw sugar.
  8. Cook additional 7 minutes. Bottoms of cookies should be a light golden colour around the edges. Cool on Wire Rack.

Ingredients
  • 1/2 Cup Donia Farms Sea Salted Butter Softened
  • 1 1/2 Tsp Vanilla Extract
  • 1 1/2 Tsp Almond Extract
  • 1 1/2 - 2 Cups Icing Sugar
  • 1 - 2 Tsp Donia Farms Heritage Milk

Instructions
  1. Add softened butter to a handheld or stand mixer and whip until light and fluffy. Add in 1 cup icing sugar, and both extracts and whip until smooth.
  2. Continue adding in Icing sugar until desired consistency is reached. Add milk if needed.
  3. Once the consistency is reached, continue whipping an additional minute. Add the Buttercream to a piping bag and pipe sandwich cookies. Optional: Use a knife and spoon to add the icing and sandwich cookies!
