Vanilla Almond Tea Cookies

4:00 is tea time around Donia Farms, and these Vanilla Almond Tea Cookies pair perfectly with a cup of english breakfast.

They are mild tasting and hit the spot for a little afternoon, pre dinner, pick me up. To take these cookies from a simple sugar tea cookie to something special, I like to sandwich them with vanilla almond buttercream. (See recipe below)

Have them on their own or as a sandwich, these little cookies are best shared with friends over afternoon tea.

Ingredients
  • 1 Cup Donia Farms Sea Salted Butter Softened
  • 1/2 Cup Granulated White Sugar
  • 2 Eggs
  • 1.5 Tsp Vanilla Extract
  • 1.5 Tsp Almond Extract
  • 2 Cups All-Purpose Flour
  • Raw Sugar For Topping
  • Almond Slices For Topping

Instructions
  1. Note: This dough is best handled when its cooled. Allow 30 minutes to cool in fridge.
  2. Cream together butter and sugar.
  3. Add eggs to creamed mixture, one at a time. Add both extracts and beat, scraping sides of bowl.
  4. Slowly mix in flour and beat until combined. Dough will be slightly sticky
  5. At this point its best to cool the dough in the fridge for a minimum of 30 minutes for best handling.
  6. Preheat Oven to 375. Roll out dough on floured surface to 1/8 inch thick. When making these cookies to sandwich cookies I like to make them as thin as possible.
  7. Bake at 375 for 2 minutes. Remove from oven and top with raw sugar and optional almond slices.
  8. Cook additional 7 minutes. Bottoms of cookies should be a light golden colour around the edges. Cool on Wire Rack.

Ingredients
  • 1/2 cup Donia Farms Sea Salted Butter Softened
  • 1 1/2 tsp Vanilla Extract
  • 1 1/2 tsp Almond Extract
  • 1 1/2 Cups Icing Sugar

  1. Beat together all ingredients with hand or stand mixer.
