Strawberry Yogurt & Oat Muffins

 

It’s strawberry season! After visiting our local Strawberry Farm we needed to recipe test and create a new recipe. These healthy Strawberry Yogurt & Oat Muffins are delicious, sweetened only with Maple Syrup and loaded with fresh strawberries.

For the batter, we use fresh chopped strawberries. Chopping them small allows you to get a bit of strawberry in each bite. We then top with additional berries that are halved and a sprinkle of oats, for extra presentation making these muffins drool-worthy. An optional step in these muffins is to sprinkle raw sugar on top just before baking. This helps add a little bit sweeter and crunchy muffin top – our favourite!

Ingredients
  • 1 Cup Donia Farms Vanilla Yogurt
  • 1/3 Cup Honey or Maple Syrup
  • 2 Eggs Room Temperature
  • 2 Tsp Vanilla Extract
  • 7 Tbsp Donia Farms Unsalted Butter Melted and Cooled to room temp
  • 2 Cups Chopped Strawberries Plus additional halved for topping
  • 1 3/4 Cups Whole Wheat or All Purpose Flour
  • 1/2 Cup Rolled Oats Plus additional for Topping
  • 2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • Raw Sugar For Topping

Instructions
  1. Preheat Oven to 375. Line muffin tin with 12 muffin liners.
  2. In a medium bowl (Or a bowl of a stand mixer) whisk together dry ingredients; flour, oats, baking powder, baking soda and salt.
  3. In a separate smaller bowl, whisk together the wet ingredients; yogurt, butter, maple syrup, eggs and vanilla.
  4. Add the wet ingredients to the dry and mix until just incorporated. Fold in the chopped strawberries and divide the muffin batter evenly among the 12 muffin liners. Top with additional halved strawberries sprinkles of oats and a generous sprinkle of raw sugar.
  5. Bake for 20 minutes, or until the toothpick inserted comes out clean. Enjoy with a generous smear of butter!
