Soft and Chewy Frosted Christmas Cookies

 

These soft and chewy frosted sugar cookies are perfect for Santa! They are topped with a delicious buttercream and best paired with a tall glass of Grass Fed Heritage Milk.

Make sure to leave at least 1 hour for your dough to cool before baking. The wait is worth it! To refrigerate your dough, form a 2 inch round log and wrap it up in plastic wrap or parchment. Once cooled, slice into cookie rounds!

You want to bake these cookies so they are just barely showing colour on the bottom. Allow them to cool for 1 minute on the pan before transferring to a cooling rack.

 

These cookies keep really well in the freezer! Stack them up layered between parchment in a freezer bag. Even better, they are delicious both room temperature and frozen!

Ingredients
Frosting
  • 1/2 Cup Donia Farms Sea Salted Butter
  • 3 Cups Icing Sugar
  • 1 Tsp Vanilla Extract
  • 2 - 4 Tbsp Donia Farms Milk 2% or 3.25

Cookies
  1. In a medium bowl, whisk together the flour, baking powder, baking soda, cream of tartar and salt. Set aside
  2. In a stand mixer or with a handheld mixer, cream together the butter and icing sugar. Add in the oil, vanilla and egg and beat until smooth.
  3. Add the dry ingredients to the wet ingredients and mix until smooth.
  4. Roll dough into a 2-inch round log and wrap in plastic wrap or parchment. Chill dough for 1 hour up to overnight.
  5. Preheat oven to 375. Cut the log into 1/2 inch wide rounds and bake for approximately 8- 9 minutes. Keep a close eye on your cookies, you want the bottoms to just barely be browned.
  6. Allow the cookies to cool for one minute on the pan before transferring to a cooling rack.
Frosting
  1. Cream the butter and slowly add in the sugar. Add in the vanilla extract and milk, 1 tbsp at a time until desired consistency is reached.
  2. Once cookies are completely cooled, decorate with frosting and sprinkles!
