Sausage & Spinach Egg Bites

I love easy make-ahead breakfasts! These Sausage and Spinach Eggs bites are good enough even my 1-year-old will eat some greens at breakfast. They are made with Italian Sausage, onions, spinach, eggs and milk.  When the kids are having them, we use Mild Italian Sausage, but I love to make a batch with Spicy Sausage for myself.

Try sprinkling the tops with a bit of cheddar before baking. It’s extra delicious!

Ingredients
  • 200 Grams Italian Sausage Mild or Spicy
  • 2 Cups Spinach
  • 1 Cloves garlic Minced
  • 1/3 Cup Onion Chopped
  • 2 Tbsp Fresh Chives Optional for Topping
  • 1/2 Cup Grated Cheddar Optional for Topping
  • Cracked Pepper For topping
  • 8 Eggs
  • 1 1/2 Cups Donia Farms Grass-Fed Milk 3.25% or 2%

Instructions
  1. Preheat oven to 375 degrees. Whisk together eggs and milk. Set aside.
  2. In a saucepan over medium heat, add Italian sausage. Continue cooking and breaking up the sausage until it is cooked through and no longer pink. Remove the sausage, leaving the leftover grease.
  3. Add the garlic and chopped onion. Saute onion until cooked and translucent. Add the sausage back to the pan.
  4. Add in the spinach and continue to saute for approximately 2 minutes or until spinach is wilted. Remove from heat.
  5. Take the spinach sausage mixture and evenly divide it among 12 muffin tins.
  6. Next, pour the egg/milk mixture evenly over the sausage mixture. Top with a sprinkle of shaved cheddar & Chives (optional) and cracked pepper.
  7. Bake at 375 for 25 minutes, or until the egg is set and the tops are just beginning to brown.
  8. Enjoy!
