Afternoon Lime Cake

“I love involving my kids in the kitchen, and this quick and easy cake is fun to make together,  and even better to eat together as an afternoon snack.

I am not a big dessert eater, and when I do, I always look for the most tart or sour thing on any menu, and my son is the same way. We both agree that this lime afternoon cake is the perfect balance of sweet and sour.

This cake would be awesome topped with June strawberries or other summer fruits and berries, with the added sweetness complementing the tart.”

Ingredients
Cake
  • 3/4 Cup Donia Farms Sea Salted Butter Softened
  • 1/2 Cup Sugar
  • 2 Large Eggs
  • 1/2 Cup Donia Farms Plain Yogurt
  • 3 Limes Zested
  • 4 Limes Juiced
  • 1 Cup All-Purpose Flour
  • 1 Cup Cake & Pastry Flour
  • 1 1/2 Tsp Baking Powder
  • 1 Tsp Baking Soda
Icing
  • 1 Lime Zested & Juiced
  • 1 Cup Icing Sugar
  • 1 to 2 Tbsp Donia Farms 3.25% Grass-Fed Milk
Servings: 8 x 8 Cake
Instructions
Make the Cake
  1. Preheat your oven to 350, and grease an 8x8 pan
  2. In a stand mixer, or by hand, cream the butter and sugar together until fluffy
  3. Add in 1 egg, mix until incorporated, then add in the 2nd egg
  4. Add in yogurt, lime zest & juice, and mix
  5. Add flour, baking powder and baking soda and mix on low until just combined
  6. Pour into prepared pan and bake 25-30 mins, until a toothpick inserted comes out clean.
  7. Let the cake cool completely before glazing.
Prepare Icing
  1. Whisk together the icing sugar, lime zest and lime juice, and then add milk until you reach your desired consistency, adjusting the milk for a thicker or thinner glaze.
  2. Drizzle the icing over the cake, and serve. Enjoy!
