Instant Pot Chicken Pot Pie

A crustless chicken pot pie made in less than 30 minutes. Enjoy all the comfort flavours made quickly in your instant pot!

We love a creamy dinner, and this pot pie is no exception. Pair it with some fresh buttered bread or whip up some of our Garlic and Chive Biscuits.

Ingredients
  • 3 Tbsp Cup of Donia Farms Sea-Salted GrassFed Butter
  • 4 Boneless Skinless Chicken Breasts
  • 1 1/2 Cups Low Sodium Chicken Broth
  • 1 3/4 Cup Donia Farms Grass Fed 3.25% Milk Divided
  • 1.5 lb Bag Mini Potatoes
  • 2 Tsp Black Pepper
  • 1.5 Tsp Italian Seasoning
  • 2 Tsp Garlic Powder
  • 1.5 Tsp Chives
  • 2 Tsp Salt
  • 1 Small Can Corn Niblets
  • 1 1/2 Cups Frozen Peas and Carrots
  • 1/4 Cup All-Purpose Flour

Instructions
  1. On the saute function of your Instant Pot, add Butter and Garlic. Saute for 2 minutes or until garlic is fragrant.
  2. Add in chicken, chicken broth, 1 cup of milk, and mini potatoes. Pressure Cook for 8 minutes. Let stand for 3 minutes before venting.
  3. After venting, pull out chicken and shred. Using a potato masher, "smash" the potatoes to desired size. Add the chicken back to the pot.
  4. Turn the instant pot to the saute function. Add in peas, carrots and corn and stir.
  5. In a small bowl, whisk together flour and 3/4 cup milk until smooth. Add to the pot and stir.
  6. Cook until mixture thickens. Season with additional spices to taste.
  7. Serve with buttered bread or biscuits. Enjoy!
