Made with yogurt and sweetened with maple syrup they are a perfect pair with your morning coffee.
1/3 plus 1/4 Cup

Pumpkin Pie Spice
Cinnamon Sugar Optional, For Topping
Preheat Oven to 350. Line muffin tins with 9 muffin liners and set aside
In a medium bowl, combine flour, pumpkin pie spice, baking powder, baking soda and salt.
In separate medium bowl combine pumpkin, maple syrup, vanilla, yogurt, egg and melted butter.
Pour wet ingredients into dry and mix until just combined. Scoop evenly into the 9 muffin liners
Optional: Sprinkle with cinnamon sugar.
Bake for 22 - 25 minutes, or until knife inserted comes out clean.
