Healthy Pumpkin Muffins

A small break between our thanksgiving stretchy pants and Halloween candy has us craving healthy but satisfying snack options.

These pumpkin muffins are made with Heritage Vanilla Yogurt and sweetened with maple syrup.. the perfect pair with your morning coffee! Make sure to freeze them or eat them up within a day or two for maximum deliciousness.

You don’t need to, but we love to top these with pecan and a sprinkle of raw sugar. The muffins are not sweet, so the little sprinkle of sugar really makes for a good muffin top!

Ingredients
  • 1 Cup Pumpkin Puree
  • 1/3 Cup Maple Syrup
  • 3/4 Cup Heritage Vanilla Yogurt
  • 1/4 Cup Heritage Unsalted Butter melted
  • 1 Egg
  • 1 Tsp Vanilla Extract
  • 1 2/3 Cups All-Purpose Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 Tsp Pumpkin Pie Spice
  • 1 Tsp cinnamon
  • 12 Pecans For Topping
  • Raw Granulated Sugar For Topping

Instructions
  1. Preheat Oven to 350. Line muffin tins with 9 muffin liners and set aside
  2. In a medium bowl, combine flour, pumpkin pie spice, cinnamon, baking powder, baking soda and salt.
  3. In separate medium bowl combine pumpkin, maple syrup, vanilla, yogurt, egg and melted butter.
  4. Pour wet ingredients into dry and mix until just combined. Scoop evenly into the 12 muffin liners
  5. To each muffin, add one pecan half. Sprinkle Tops with Granulated Sugar
  6. Bake for 22 - 25 minutes, or until =tooth pick inserted comes out clean.
