Grandma’s Nanaimo Bars

Straight from the recipe box, Grandma’s Nanaimo Bars are a favourite no bake desert! A chocolate, coconut and graham crumb base, custardy vanilla middle and a smooth chocolate top. Its an oldie, but a real goodie.

For a fun spin on your Nanaimo Bar, try adding 1 1/4 tsp peppermint extract and a few drops of green food colouring to the custard layer. Its delicious!

  • 1/2 Cup Cup of Donia Farms Sea-Salted GrassFed Butter
  • 1/4 Cup Granulated White Sugar
  • 1 Egg
  • 4 Tbsp Cocoa Powder
  • 2 Cups Graham Wafer Crumbs
  • 1 Cup Coconut
  • 1/2 Cup Chopped Nuts (Optional)
Custard Layer
  • 1/4 Cup Butter Softened
  • 3 Tbsp Cup Donia Farms Grass Fed Milk
  • 2 Tbsp Vanilla Custard Powder
  • 2 Cups Sifted Icing Sugar
Chocolate Topping
  • 4 Oz Chocolate
  • 1 Tsp Butter
  1. Line a 9 x 9 baking pan with parchment and set aside. (Note, can also use a 7 x 11 inch pan, which will result in a slightly thicker bar)
  2. For the base layer: In a heat proof bowl, (or double boiler) add the butter, white sugar, egg, and cocoa. Place over boiling water and stir until the mixture looks like a custard. Remove from heat and stir in graham crumbs and coconut. Press the base layer mixture down in the prepared pan.
  3. For the Custard: Cream butter, milk, custard powder and icing sugar until nicely whipped and smooth. Spread over the base layer. Place in the fridge to set
  4. Melt the chocolate and butter and spread over the custard layer. Place in the fridge to set.
  5. Once completely set, cut into bars.
  6. For Mint Nanaimo Bars: Mix in 1 1/4 Tsp Mint Extract and green food colouring into the custard layer.
