Double Chocolate Zucchini Muffins

Two words…  double. chocolate. Do we have your attention? These Double Chocolate Zucchini Muffins are a win! As they are sweetened with just maple syrup, they are healthier, making them a perfect nut-free lunchbox staple. What makes these muffins extra good? The addition of our Heritage Grass Fed Milk and Butter, of course 😉

Ingredients
  • 1 1/4 Cup Whole Wheat of All Purpose Flour
  • 1/3 Cup Unsweetened Cocoa Powder
  • 2 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 2 Tbsp Donia Farms Unsalted Butter Melted
  • 1/3 Cup Maple Syrup
  • 1 Tsp Vanilla
  • 1 Egg
  • 1 Cup Shredded Zucchini (about 1 medium)
  • 1 Ripe Mashed Banana (Sub 1/2 cup applesauce)
  • 1/2 Cup Donia Farms 3.25% Grass-Fed Milk
  • 1/2 Cup Mini Semi Sweet Chocolate Chips

Instructions
  1. Preheat oven to 350 degrees. Line 12 muffin tins with cupcake liners.
  2. Squeeze shredded zucchini of excess water with a paper towel and set aside.
  3. In a medium bowl, whisk together flour, cocoa powder, baking soda and salt; set aside.
  4. In the bowl of an electric mixer, add butter, maple syrup, vanilla, and egg; mix on a medium until smooth and well combined. Add in zucchini, banana and milk and mix again.
  5. Slowly add in dry ingredients and mix until well combined. Fold in chocolate chips, reserving some for topping.
  6. Evenly divide batter into prepared liners. Bake 22 - 25 minutes or until a toothpick inserted comes out clean. Cool on a cooling rack. Enjoy!
