Coconut Christmas Cookies

Another oldie from Grandma’s recipe box. These Coconut Christmas Cookies are simple to make and delicious. Make them up on Christmas Eve and leave them out for Santa. We promise they will go down good with a tall glass of milk.

Ingredients
  • 3/4 Cup Cup of Donia Farms Sea-Salted GrassFed Butter Softened
  • 1 Egg
  • 1/2 Tsp Vanilla
  • 1 Cup Sweetened Flaked Coconut
  • 1/2 Cup Granulated White Sugar
  • 2 1/2 Cups All-Purpose Flour Sifted
  • 1/2 Tsp Almond or Lemon Extract

Instructions
  1. ** Allow 30 minutes for dough chill time **
  2. Cream butter. Gradually add in sugar, creaming well after each addition.
  3. Add in egg and beat well. Add flour a small amount at a time, mixing thoroughly after after each addition.
  4. Blend in vanilla, almond extract and coconut.
  5. Divide dough into two portions and wrap in parchment paper. Chill 30 minutes.
  6. Preheat oven to 400. Roll out chilled dough about 1/8 inch thick and cut into desired shapes with 2 inch cookie cutters. (lightly flouring cutters if necessary)
  7. Bake on baking sheets at 400 degrees F for approximately 6 minutes. Edges will be just golden.
  8. Cool and enjoy with a tall glass of milk.
