Chewy Peanut Butter Cookie

We are peanut butter fans! All things peanut butter are good in my books, and these chewy peanut butter cookies are no exception.

When baking these cookies I do not flatten them on the pan. I leave them as rounds (created with an ice cream scoop) and top them generously with granulated sugar.

 

They will look just set when you take them out of the oven, but don’t be fooled and tempted to cook them longer. After they cool for 5 minutes on the pan they will deflate slightly and you will be able to transfer them to a wire rack to cool. They should still have a light golden coloured bottom.

Served best as an after school snack with a tall glass of milk!

Ingredients
  • 1/2 Cup Donia Farms Sea Salted Butter
  • 1 Cup Smooth Peanut Butter
  • 2/3 Cup Brown Sugar
  • 1/2 Cup Granulated White Sugar
  • 1 Egg Room Temperature
  • 3/4 Cup plus 2 Tbsp All-Purpose Flour
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • Granulated White Sugar For Topping

Instructions
  1. Preheat oven to 350
  2. Whip butter and peanut butter until smooth Add sugars and cream until smooth Add egg and vanilla and beat until smooth
  3. In separate bowl whisk together flour, baking soda and baking powder. Add to the wet ingredients and beat until combined.
  4. Using ice cream scoop drop rounds of dough onto cookie sheet and top generously with granulated sugar.
  5. Bake at 350 for 9 - 10 minutes. Allow to cool on pan for 5 minutes before transferring to cool on wire rack. Note: Cookies will look just set when they come out but will have a light golden bottom.
  6. Enjoy with tall glass of milk!
