Chewy Oatmeal Raisin Cookie

Don’t underestimate the goodness of an Oatmeal Raisin Cookie!  Every time I make Oatmeal Raisin I am reminded how good they are. These cookies freeze well and are heavenly when warmed up  from frozen for 25 seconds in the microwave.

The edges of these cookies should be slightly golden. I like to see my oatmeal raison cookies slightly crisp on the edges and extra chewy in the centre. These cookies hit the mark for that.

For extra heartiness, I have used Rogers Porridge Oats and Healthy Grains, in replacement of the rolled oats,  and loved how the cookies turned out!

Ingredients
  • 3/4 Cup Butter
  • 1 Cup Brown Sugar
  • 1/2 Cup Granulated White Sugar
  • 2 Eggs
  • 2 Tsp Vanilla Extract
  • 1 1/4 Cuo All-Purpose Flour
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1 to 1 1/2 Tsp cinnamon
  • 2 Cups Rolled Oats
  • 3/4 Cup Quick Oats
  • 1 Cup Raisins
Servings: Cookies
Instructions
  1. Preheat oven to 375
  2. Whip Butter. Add sugars and cream until light and fluffy.
  3. Beat in eggs, one at a time. Add vanilla and beat until smooth.
  4. In separate bowl, whisk together flour, baking soda, baking powder, and cinnamon.
  5. Add dry ingredients to wet ingredients and beat until combined. Add in oats and raisins and mix until incorporated evenly.
  6. Using Ice cream scoop, drop large rounds of dough to baking sheet. Bake at 375 for 10 minutes. Cookie edges will be golden.
