Cheese Burger Soup

There are many versions of the indulgent Cheese Burger Soup, but this is our favourite. We love to serve this with fresh bread and our Big Salad. Its great to pack for the cabin, ski hill, or on cozy nights in.

Top the soup with all your favourite toppings  such as chives, sour cream, bacon bits and sharp cheddar.

Ingredients
  • 1 lb Ground Beef
  • 1 Medium Onion Diced
  • 1 Cup Carrot Shredded or Chopped
  • 1 Cup Celery Chopped
  • 2.5 Cups Mini Potatoes Sliced
  • 1 Tsp Minced Garlic
  • 1 Tsp Basil
  • 1 Tsp Parsley
  • 3/4 Tsp Italian Seasoning
  • 6 Cups Chicken Broth
  • 1/3 Cup Flour
  • 1.5 Cups Donai Farms 3.25% Grass-Fed Milk
  • 1 Cup Velveeta Cheese Cubed
  • 1 Cup Cheddar Cheese Shredded
  • 1 Tsp Pepper Or to Taste
  • 5 Tbsp Grass Fed Butter

Instructions
  1. In large Pot, brown ground beef. Drain and set beef aside.
  2. In the pot you used for the beef, melt 2 tablespoons of butter and saute onion for 5 minutes or until tender. Add Carrots, Celery , Garlic, Basil, Parsley and Italian Seasoning and saute until veggies are tender.
  3. Add in chicken broth and potatoes and bring to boil. Reduce heat to medium high and cook until potatoes are cooked.
  4. Melt 4 Tbsp of butter in small skillet. Whisk in 1/3 cup of flour. Whisk mixture into the broth veggie mixture to thicken.
  5. In the Skillet you used for the Flour Mixture, add Milk, Cheese and Pepper. Stirring frequently melt cheese. Once Melted add to your broth mixture.
  6. Add beef back to soup. Bring Soup to boil and allow to simmer until ready to serve!
