Browned Butter Banana Bread

It seems so often a bundle of bananas goes brown on us. This browned butter banana bread is the perfect solution! With warm hints of cinnamon and nutmeg, and the addition of walnuts and coconut, this loaf is best enjoyed warm as an after school snack with a generous smear of butter or peanut butter. Have a picky eater? Sub the walnuts for chocolate chips!

Ingredients
  • 4 Large Bananas (5 small or medium sized)
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Donia Farms Sea Salted Butter
  • 1/2 Cup Maple Syrup
  • 2 1/4 Cups All-Purpose Flour
  • 3/4 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1 Tsp Ground Cinnamon
  • 1/2 Tsp Ground Nutmeg
  • 1/2 Cup Chopped Walnuts
  • 1/2 Cup Shredded Coconut

Instructions
  1. Preheat oven to 350. Line Loaf Pan with parchment paper.
  2. Using hand held or stand mixer, mash bananas. Add in eggs, vanilla, maple syrup and brown sugar.
  3. Brown the Butter - In sauce pan over medium high heat, melt the butter. continue stirring until foaming and streaks of golden brown appear. Turn heat down and remove from element. Butter should be golden and fragrant.
  4. Add browned butter to banana mash mixture and combine.
  5. In separate bowl whisk together flour, baking powder, baking soda, cinnamon and nutmeg.
  6. Add dry ingredients to wet mixture and stir to combine. Fold in Nuts and Coconut. Do not over mix.
  7. Pour into loaf pan and bake at 350 for 60 - 70 minutes. (Time may very depending on oven). Loaf will be done when knife inserted comes out clean.
