Blueberry Almond French Toast Casserole

Ingredients
  • 1 French Loaf day old, see note*
  • 6 Eggs
  • 2 Cups Donia Farms 3.25% Grass-Fed Milk
  • 4 Tbsp Granulated White Sugar
  • 1/3 Cup Donia Farms Vanilla Yogurt
  • 3/4 Tsp cinnamon
  • 2 Tsp Almond Extract
  • 1 Cup Blueberries Fresh or Frozen
  • 1/4 Cup Sliced Almonds
  • Icing Sugar For Topping

Instructions
  1. Preheat oven to 350. Grease 9 x 13 pan and set aside.
  2. Chop loaf into 1/2 - 1 inch cubes and set aside
  3. In medium bowl, whisk eggs, milk, yogurt, sugar, cinnamon, zest and almond extract.
  4. Add half of the bread into the greased pan. Pour half of the egg/milk mixture over the bread. Add half of the berries of the soaked bread.
  5. Repeat step 4 with the remaining ingredients.
  6. Bake at 350 for 20 minutes, take our casserole and top with sliced almonds. Continue baking for additional 25 - 35 minutes. Bread will be golden brown on top and casserole will feel just set. If almonds of bread is toasting too fast, cover with foil.
  7. Dust with powdered sugar. Serve with dollop of vanilla yogurt and maple syrup. Serve with orange slices. Enjoy!
  8. *If bread is fresh, after cubing spread onto cookie sheet and bake at 350 for 3 minutes before soaking in milk/egg mixture.
