Zucchini Bread

This zucchini chocolate chip loaf is the kind of recipe you’ll want to make again and again. It’s tender and cozy, with just the right amount of sweetness and a rich texture from our yogurt. The zucchini melts right in, keeping the loaf moist without anyone guessing it’s there, while pockets of chocolate chips make every slice a little treat. Simple, comforting, and perfect for sharing with family.

Ingredients

Wet Ingredients

1/3 cup

Vegetable oil

1/3 cup

Maple syrup

1/3 cup

Brown sugar

Vanilla

Dry Ingredients

1.5 cups

Flour

1.5 tsp

Baking powder

1/2 tsp

Baking soda

2 tsp

Cinnamon

1/2 tsp

Salt

Add Ins

1 cup

Zucchini, finely grated (squeeze out excess water with your hands; it should still be moist but able to form a ball)

3/4 cup

Chocolate chips

1-2 tbsp

Raw sugar

Instructions
  1. Preheat oven to 350°F. Line a loaf pan with parchment paper.

  2. In a large bowl, whisk together all wet ingredients until smooth.

  3. In a separate bowl, whisk together all dry ingredients.

  4. Add the dry ingredients to the wet mixture and stir gently with a wooden spoon or spatula until just combined.

  5. Fold in the zucchini and chocolate chips.

  6. Pour the batter into the prepared loaf pan, and sprinkle the top generously with raw sugar.

  7. Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.

  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
