Viral Feta Fried Eggs

This might just be my new favourite EASY meal.  Its been trending for sometime, and I cant believe I have just started making it! If fried eggs are one of your go-to ways to eat eggs, this will be your new favourite too. Simply sprinkle a generous amount of our Grass Fed Heritage Feta on the pan prior to cracking your egg, and the result is delicious!

Adding the fried feta egg to a wrap is not the only way to eat this. Try it on its own, on toast, or however you would usually eat your fried egg.

For this specific recipe, we love a runny yolk, because it acts as a sauce for the wrap. But if that’s not your thing, do your egg medium! The creaminess of the avocado still acts as a sauce. The chilli oil is completely optional, but in my opinion, if you like a little spice,  its what brings it all together! SO SO YUM!

Small Tortilla.

Chilli Oil, to taste

Instructions
  1. On a skillet or in a frying pan over medium heat, add the feta cheese covering an area approximately the size of a cracked egg.

  2. Crack the egg(s) over top of the feta, and place a pan lid overtop to help steam the egg. Cook for approximately 3 minutes, or until egg is done, but yolk is still runny. Remove from heat when done.

  3. Optional: Using same pan add a tsp of butter over low/medium heat. Once melted, add the tortilla to warm it.

  4. When the tortilla bottom is just golden, flip. If needed add an additional tsp of butter. Then, add the sliced avocado on top of the cooked side of the tortilla.

  5. Add the feta egg on top of the avocado. Transfer the tortilla to a plate, slice the yolk and spread it to make a sauce. Next, top with chilli oil and pepper if desired.  Fold the tortilla and dig in!
