Triple Chocolate Candy Cane Cookies

These cookies are my kids new favourite! And for good reason! Its got triple chocolate… cocoa powder, mini chocolate chips and our sneaky secret ingredient.. a package of chocolate pudding mix! They are soft, chewy and with addition of crushed candy cane they are the perfect festive treat!

Ingredients
3/4 cup

Grass Fed Heritage Unsalted Butter , softened

1/3 cup

packed brown sugar

1/3 cup

white sugar

1

egg

1 tsp

vanilla extract

1 cup

all purpose flour

1/3 cup

cocoa powder

1/2 tsp

baking powder

1/2 tsp

baking soda

1/2 tsp

salt

1 package

Chocolate Pudding Dry Mix (113g)

2 Tbsp

mini chocolate chips

1/3 cup

Crushed candy cane, plus additional for topping.

Instructions
  1. Preheat oven to 375

  2. In the bowl of a stand mixer (or large bowl with hand held mixer), add the butter. Beat on a high speed for 1 minute. Then, add in the brown sugar and white sugar. Cream the butter and sugars for 3 minutes until the mixture is light and fluffy. Be sure to scrape the side of the bowl a couple times during creaming.

  3. While the butter is creaming line a baking sheet with parchment and set aside.

  4. Add in the egg and vanilla and beat an additional minute.

  5. Add in the flour, cocoa powder, salt, baking powder and baking soda and milk. Beat until just combined.

  6. Next, add in the mini chocolate chips and crushed candy cane.  Mix until just combined.

  7. Make 2 Tbsp sized dough balls and top them with a few extra pieces of crushed candy cane. Bake for 10 minutes. If the cookies do not come out perfectly round I like to use a rubber spatula to reshape them right when they come out of the oven by gently pushing the sides in.

    Allow the cookies to cool mostly before transferring to a cookie rack.

  8. Enjoy with a tall glass of milk!
