Greek Salad

Here is our version of an easy Greek Salad! I love to use both cubed and crumbled Grass Fed Feta in this recipe. The mix of texture and bigger cubed chunks of feta is delicious!  This is a quick cheater salad dressing using a bit of pesto for added herby flavor.

One of my favourite repeat summer meals is a big greek salad, meatballs, tzatiki and pita bread

I dont like olives, so they are omitted from this recipe, instead I like to add avocado.  If you and your family love olives be sure to add them in! 

1/4 cup

Olive Oil

3 Tbsp

Red wine vinegar

1 tsp


1 tsp

Dijion Mustard

1 small clove

Garlic, minced




Green bell pepper

1 1/2 cups





Onion (white or sweet onion)

  1. Prepare the salad dressing; whisk together the olive oil, vinegar, pesto, dijion mustard and garlic and set it aside.

  2. Chop the cucumber, green pepper, tomatoes, onion. Add to a salad bowl and toss with the desired amount of dressing. Top with sliced avocado and serve.



  3. Notes: Add more or less of each salad ingredient to your taste. If you love cucumber, add more! etc.

    This salad keeps well in the fridge if you make it ahead of time, just be sure to add the avocado  just before serving!
