Salmon and Feta Salad

A simple, easy and healthy dinner!

This recipe comes together quickly and is made easy and more affordable by using canned salmon.  Fresh dill,  our creamy natural yogurt, and lemon make up the fresh flavours.

If you want to skip the salmon cake, replace it with a different protein of choice, grilled chicken or fresh salmon would also be delicious!

 

 

 

 

Ingredients
SALAD
6 cups

Arugula

Drizzle

Olive oil

Salt

Pepper

2/3 cup

Chopped cucumber

1/2 cup

Sliced radishes

1 package

Donia Farms Feta Cheese, crumbled or cubed

DRESSING
1 cup

Donia Farms Natural Yogurt

2 Tbsp

Lemon juice

1 Tbsp

Mustard

1/4 cup

Chopped fresh dill

1/2 tsp

Salt

1/2 tsp

Pepper

2 Tbsp

Olive Oil

Milk, as needed to thin dressing.

SALMON CAKES
3 cans

Salmon

1/3 cup

Mayo

1/2 tsp

Salt

1/2 tsp

Pepper

1/2 tsp

Garlic

1/2 tsp

Dry mustard

2 Tbsp

Fresh Dill

2 Tbsp

Green onion

3/4 cup

Panko

Oil, to fry

Instructions
  1. In a medium bowl add the arugula. Drizzle lightly with olive oil and season with salt and pepper. Using your hands massage the oil with arugula for one minute.

  2. In a small bowl whisk together the yogurt, olive oil, lemon juice, mustard, salt, pepper and dill. Set aside.

  3. Drain salmon. To a medium bowl add the salmon, mayo, salt, pepper, garlic, dry mustard, green onion and dill. Mix well. You should easily be able to form a ball and the mixture to hold. If its to dry add a bit more mayo. Form 8 patties.

  4. Add the panko to a plate. Dip the patties in the panko lightly pressing it in. Heat oil on medium high heat. Once hot, add the patties and fry until golden on each side.

  5. Add arugula to plates, top with cucumber, radishes and a generous amount of crumbled feta. If desired add additional chopped dill to the salad. Top the salad with two salmon cakes, and drizzle generously with the yogurt dressing.
