This is the only Soup recipe you need this fall! Roasted Cauliflower cheddar soup is delicious and super easy to make. I love that its just a handful of simple ingredients. Make sure to make bacon for topping shredded cheese, bacon and green onion.
To make this soup extra hardy, you can add in 2 peeled and diced potatoes. To do this, add in the diced potatoes to the chicken stock before you add in the cauliflower. Boil the potatoes until tender and then follow the recipe as directed!
Ingredients
Cauliflower
Donia Farms Cheddar Cheese, shredded
Chicken broth
Donia Farms 3.25% Milk
Onion, diced
Garlic
Thyme
Salt
Pepper
Bacon, for topping
Green Onion, for topping
Additional Cheddar, for topping
Instructions

Preheat oven to 400. Chop the cauliflower into florets and drizzle with olive oil, then season with salt and pepper. Roast for 30 minutes or until the cauliflower is tender and has golden edges.

Meanwhile, dice the onion. Add 1 tbsp of butter to a stock pot and add in the garlic and onion. Saute until the onion is tender.

To the stock pot, add chicken stock, cauliflower, and thyme. Using an immersion blender, blend the cauliflower until it is completely smooth. Next, heat until hot.

Add in the milk and cheddar cheese, then season with salt and pepper to taste.

Top your soup with crumbled bacon, shredded cheese and green onions.
