Quinoa Feta Salad

Its rumoured that Jennifer Aniston ate a similar salad everyday on the set of Friends! We tried our take on this poplar salad that is filled with herbs. It’s hearty and satisfying. Give our version a go!

1 cup

Quinoa/bulgur blend

2 cups

Chicken broth

1 1/4

Cucumber, chopped

1 1/4 cup

Chickpeas, rinsed and drained

1/3 to 1/2 cup

Red onion, finely chopped

1/2 cup

Fresh mint, chopped

1/2 cup

Fresh Parsley

1 cup

1/4 cup

Olive oil

1/4 cup

Lemon juice

1 clove

Garlic, minced

2 tsp


1/4 tsp


1/4 tsp



Avocados, optional

  1. Make the quinoa/bulgar as directed on the box. Make sure to substitute the water for chicken broth.

  2. Toss together the cooked quinoa/bulgar, cucumber, chickpeas, onion, herbs, pecans and feta in a large bowl.

  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt pepper and mustard until smooth. Add to the salad and toss to combine. Taste and season with additional salt and pepper if desired.

  4. Optional: Top your salad with sliced avocado!
