Its rumoured that Jennifer Aniston ate a similar salad everyday on the set of Friends! We tried our take on this poplar salad that is filled with herbs. It’s hearty and satisfying. Give our version a go!
Ingredients
Quinoa/bulgur blend
Chicken broth
Cucumber, chopped
Chickpeas, rinsed and drained
Red onion, finely chopped
Fresh mint, chopped
Fresh Parsley
Donia Farms Grass Fed Feta, crumbled or cubed
Olive oil
Lemon juice
Garlic, minced
Mustard
Salt
Pepper
Avocados, optional
Instructions

Make the quinoa/bulgar as directed on the box. Make sure to substitute the water for chicken broth.

Toss together the cooked quinoa/bulgar, cucumber, chickpeas, onion, herbs, pecans and feta in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, garlic, salt pepper and mustard until smooth. Add to the salad and toss to combine. Taste and season with additional salt and pepper if desired.

Optional: Top your salad with sliced avocado!
