Quinoa Feta Salad

Rumour has it Jennifer Aniston ate a version of this every day on set for 10 years. While we weren’t there to sneak a bite of hers, our take is definitely ‘The One Where Everyone Asks for the Recipe.’

It’s packed with fresh herbs, hearty grains, and enough flavour to make Joey actually want to share food (maybe).

Ingredients
1 cup

Quinoa/bulgur blend

2 cups

Chicken broth

1 1/4

Cucumber, chopped

1 1/4 cup

Chickpeas, rinsed and drained

1/3 to 1/2 cup

Red onion, finely chopped

1/2 cup

Fresh mint, chopped

1/2 cup

Fresh Parsley

1 cup

Donia Farms Grass Fed Feta, crumbled or cubed

1/4 cup

Olive oil

1/4 cup

Lemon juice

1 clove

Garlic, minced

2 tsp

Mustard

1/4 tsp

Salt

1/4 tsp

Pepper

Instructions
  1. Make the quinoa/bulgar as directed on the box. Make sure to substitute the water for chicken broth.

  2. Toss together the cooked quinoa/bulgar, cucumber, chickpeas, onion, herbs, pecans and feta in a large bowl.

  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt pepper and mustard until smooth. Add to the salad and toss to combine. Taste and season with additional salt and pepper if desired.

  4. Optional: Top your salad with sliced avocado!
