Plum Bars

Is there anything more satisfying than eating in season, home grown fruit?! Its plum season! and we have sooo many that have been generously gifted from a friend.  The tartness of the plums combined with the sweet cinnamon oat crust and crumble is perfect for coffee time.

When measuring out the plums, I first dice them, and then add them out in a measuring cup, packing them down slightly. This keeps the measurements even enough!  4 cups of packed plums equals about 25 small plums for me.

 

Ingredients
4 cups

plums, diced and packed

3 Tbsp

Cornstarch

1 Tbsp

Lemon juice

2 tsp

Vanilla extract

1/4 cup

Brown sugar

CRUST
2 1/4

Oats

1 1/4 cup

Flour

1 cup

Brown Sugar

1 tsp

Cinnamon

1/4 tsp

Nutmeg

1 cup

Salted Butter

Instructions
  1. Preheat oven to 350. Line a 9 inch baking pan with parchment and set aside.

     

  2. Next, toss together the plums, corn starch, lemon and vanilla, then set it aside.

  3. In a food processor or blender add the oats. Pulse until they are a fine crumb. (I like some textire though!) Add the flour, cinnamon and nutmeg. Next, add the melted butter and pulse until combined. . You should be able to form a ball with the mixture using your hands. If the mixture seems to dry, you can add 1 Tbsp of milk.

  4. Take half of the oat mixture and press it into the bottom of the pan to form the bottom crust. Next, spread the plums over the bottom crust. Finally, using your fingers crumble the remaining oat mixture on top of the plums.

  5. Bake for 35 – 40 minutes. This bar is best to set in  to room temperature than chill in the the fridge to allow the juices from the plums to set. Slice into bars and enjoy!
