Peanut Butter Stuffed Cookies

My kids love anything that is chocolate and peanut butter. One day when we were going to bake, my boys were fighting over if we make chocolate or peanut butter cookies. Well, we compromised on creating this recipe! To our surprise, they turned out so well! We took our favourite peanut butter recipe and made it using Nutella…. then filled the dough with peanut butter balls.

I wanted cookies that were easy enough for the kids to help make, and they needed minimal dough chill time because we wanted a sweet treat! These cookies look a little funny, but they are so fun to bite into the PB centre!

Ingredients
1 cup

Nutella hazelnut spread

2/3 cup

brown sugar

1/2 cup

White sugar

1

Egg

1/2 tsp

Baking powder

1/2 tsp

Baking soda

3/4 cup

All purpose flour

1/4 cup

Cocoa powder

FILLING
1/2 cup

Smooth peanut butter (ex. Kraft)

1/2 cup

Icing sugar

1/2 tsp

Vanilla extract

Instructions
  1. In a medium bowl, sift together the flour, cocoa powder, baking soda and baking powder. Set aside

  2. In the bowl of a stand mixer, cream together the butter and Nutella until smooth, Add in the sugars and mix until light and smooth.

  3. Next, add the egg. Beat until well combined.

  4. Add the dry ingredients to the wet ingredients. mix on low speed until well incorporated. The dough will be a bit sticky. Place the bowl in the fridge until ready to roll cookies.

  5. In a small bowl combined the peanut butter, icing sugar and vanilla with a spatula until smooth. if needed, add 1 tsp of milk at a time until you are able to roll the mixture into a ball and it will hold.

  6. Preheat the oven to 350. While the oven preheats, make peanut butter disks. Take 1 tsp of the mixture and form a ball with your hands. Press the ball down to form a disk. Repeat until you have used all the peanut butter.

  7. Take the dough out of the fridge. Use a 1 tbsp cookie scoop or measuring spoon to make rounds. Take 1 round and flatten it slightly. Place 1 peanut butter disk on top, then cover it with another dough round to make a ball. Make sure no peanut butter is showing.  Repeat this step to use up all the dough.

  8. Bake the cookies for 9 minutes. Allow to cool on a pan for 2 minutes before transferring to a cooling rack. Do not overbake. The cookies will have a slightly crispy chocolate edge and a chewy peanut butter centre!
