Orzo Salad

Pasta salad is a great option for lunch or dinner, and it’s packed with nutrition! Not only is it a delicious meal, it’s also a great way to get more veggies into your diet.

Our salad is loaded with  cherry tomatoes, cucumbers, bell peppers,  beans, onions, our Grass Fed Feta Cheese and fresh herbs. If you’d like to add additional protein you can top it off with grilled chicken or hard boiled eggs! The dressing has a yogurt base and is filled with herbs like garlic, smoked paprika and fresh dill.

This recipe makes a large batch to feed a crowd. Try making it for your family’s lunches for the week. Its easy to make and comes together in no time!

Ingredients
2 cups

Orzo, made according to package instructions

1 cup

Cucumber

1 Cup

Tomato, diced

1 Cup

Orange or yellow pepper, diced

1 cup

Fresh Italian parsley

3/4 cup

Red onion, small diced

1 cup

Cannellini beans

1 package

DRESSING
2/3 cup

Donia Farms Grass Fed Natural Yogurt

3 Tbsp

Mayo

2 tsp

Mustard

2 tsp

Garlic

1 1/2 tsp

Smoked paprika

1 Tbsp

Dry dill

1 tsp

Italian seasoning

2 tsp

Apple cider vinegar

1/2 tsp

Salt

1/2 tsp

Pepper

Instructions
  1. Combine all the dressing ingredients in a small bowl and set it aside.

  2. Chop the cucumber, tomato’s, and pepper. Small dice the onion and parsley. Chop or crumble the feta cheese.

     

  3. In a large bowl combine all ingredients. Top with an additional sprinkle of parsley. Keep in the fridge until ready to eat.
