These Oat Apple Spice Muffins taste like fall! They are hearty and taste of light apple and warming spices. They are filled with the goodness of rolled oats, Grass Fed Heritage Milk and Yogurt and topped with a dusting of cinnamon sugar. This recipe makes 20 medium sized muffins. We love to freeze them, and eat them freshly warmed up with a generous smear of butter.
Don’t be scared by the lengthy directions of these muffins. They are unique in that you soak the oats for 45 minutes in milk and yogurt prior to baking. We love to get them soaking, then prep all the ingredients! When everything is prepped and pre-measured it’s so easy to get your little ones involved in the baking process! (And a little less messy!)

Ingredients
Rolled oats
Apple sauce
Vanilla extract
Apple, grated with the skin on
Eggs
All purpose flour (or 1 cup all purpose and 1 cup whole wheat)
Baking Powder
Salt
Cinnamon
Pumpkin pie spice
Brown sugar
Donia Farms Sea Salted Butter, melted and cooled
Cinnamon sugar, for topping
Instructions

Prep: In a large bowl, combine the rolled oats, milk, yogurt, vanilla extract and applesauce. Mix to combine and set aside for the oats to soak for 45 minutes. Place in the fridge until ready to use.

Meanwhile, prep the rest of your recipe. Line two muffin tins with 20 muffin liners and set aside. Grate the apples. Squish out the excess juice and pack into a 1 cup measuring cup. Set in the fridge until ready to use. Whisk two eggs in a small bowl and plac e them in the fridge until ready to use. Melt butter and set aside to cool until ready to use.

Whisk together the dry ingredients; flour, baking powder, salt, cinnamon and pumpkin pie spice. Measure out the brown sugar and leave it out to add to the wet ingredients.

Preheat oven to 400. and clean up your mess while waiting for the oats to finish soaking!

Once 45 minutes has elapsed, to the soaked oats, add in the whisked eggs and brown sugar. Stir to combine well.

Divide among the muffins liners. Sprinkle generously with Cinnamon Sugar and a sprinkle of rolled oats. (Not needed, but it’s so good!) Bake for 18 minutes or until the toothpick inserted comes out clean.
