My Nan used to make these date bars. They are so nostalgic to me and remind me of having tea and date bars around the holidays. They are very few ingredients and easy to make. They are sure to be a hit with your family and friends!
Ingredients
Chopped pitted dates
Brown Sugar
Water
All purpose flour
Baking soda
Salt
Donia Farms Sea Salted Butter, cold
Rolled oats
Lightly packed brown sugar
Instructions

Place block of butter in the freezer until ready to use. Line an 8 x 8 or 9 x 9 square baking pan with parchment and set aside. Preheat oven to 325.

In a saucepan add the chopped dates, Tbsp of brown sugar and water. Bring the mixture to a boil, then turn to a low hear. Dates should be soft and you will be able to mash them. Mash the mixture to a jam like consistency . It will take a few minutes. Set the mixture aside.

In a medium bowl mix together the flour, baking soda, salt, brown sugar, and rolled oats. Take the butter out of freezer and using a cheese grater, grate the butter. Using your hands or a pastry cutter, cut the butter into the flour mixture. Continue to cut in the butter until the butter clumps are the size of a pea or smaller.

Take half of the flour oat mixture and press it down into the pan firmly using your hands or a spatula. Take the date jam and using a spoon carefully spread it out into a thin layer. Don’t worry if some of the oats mix into the date jam!

Cover the date layer with the remaining oat mixture by crumbling it on top and patting it smooth gently. Bake for 35 to 40 minutes or until golden brown.
