Mini Chocolate Chip Muffins

Serves: Approx 30 - 35 mini muffins

Looking for an easy to bake and kid approved option? These are my kids new favourite muffins! They have to be mini and they have to have mini chips. They are a easy to make, and mild tasting so approved for by my picky kids.   They are also good spiced up with a little cinnamon and dash of nutmeg!

Ingredients
1 cup

All purpose flour

1/2 tsp

Baking Powder

 

1/2 tsp

Baking Soda

1/4 tsp

Salt

1/2 cup

White sugar

1 Tbsp

Canola or Vegetable Oil

1 tsp

Vanilla

1/4 cup

Mini Chocolate Chips

1/2 tsp

Cinnamon (Optional)

Sprinkle

Nutmeg

Instructions
  1. Preheat Oven to 350 degrees. Line mini muffin tray with liners and set aside.
  2. In a small bowl, whisk together the flour, baking soda, baking powder, salt and optional spices.

  3. In a separate medium bowl, whisk together the sugar, melted butter, oil, yogurt, egg, milk and vanilla. 
  4. Add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chips. 
  5. Fill muffin liners near the top, and then top with additional mini chocolate chips. Bake at 350 degrees for approximately 12 minutes, or until a toothpick comes out clean.
