Meatballs

Category: Lunch & Dinner
Best for: Salad
Serves:

I make a big batch of these meatballs about once a month. They freeze well and are so versatile to pair with pasta, on salads, in sandwiches or just as a grab-and-go snack!

I switch up adding either Feta or Cheddar to the recipe. Either or is good – you can’t go wrong!

Ingredients
1 lb

Ground beef

1 lb

Ground pork

1/2 cup

Italian bread crumbs

1/2 cup

Grated parmesan

2

Eggs

2 Tbsp

Mustard

2 Tbsp

Ketchup

2 Tbsp

Parsley

2 tsp

Garlic powder

1 tsp

Salt

1 tsp

Pepper

Instructions
  1. Preheat oven to 400.

  2. In a large bowl, combine all ingredients until well incorporated. We find using our hands is the easiest! Using a cookie scoop or spoon, scoop 1 tablespoon of meat and form balls with your hands!

  3. Place on a cookie sheet and bake for 10 minutes. After 10 minutes, turn the meatballs and bake for another 5 – 10 minutes, until the meatballs are cooked through.
