Mac & Cheese

The ultimate comfort food! Try out this easy Mac and Cheese with a little extra protein with added cottage cheese.

I love Mac and Cheese as a side dish for steak. Plus a green salad for a little balance 😉 Its delicious and a meal the whole family will eat.

If you like to make your dinner ahead of time, after step 4, cover and place in the fridge until ready to eat!

Ingredients
2 1/2 cups

Macaroni noodles

1/4 cup

Donia Farms unsalted Butter

1/4 cup

Flour

2 cups

Donia Farms 3.25% Milk

2 cups

Donia Farms Grated Cheddar Cheese, shredded, plus additional for topping

1 cup

Velveeta cheese, cubed
*If you prefer to not use Velveeta you can sub 1.5 cups of shredded Swiss Cheese!

2 cups

Cottage Cheese

1 tsp

Salt

1 tsp

Garlic Powder

1/2 tsp

Oregano

1 tsp

Pepper

1/2 tsp

Paprika, for topping.

Instructions
  1. Cook macaroni noodles to al dente. Meanwhile, preheat the oven and grease a 9 x 13 baking dish or large round skillet lightly with butter.

  2. In a large stock pot, add the butter over medium heat and stir until melted. Slowly add the flour and whisk to combine. Then, gradually add the milk, whisking well until smooth and the sauce thickens. Add in the salt, pepper, oregano, garlic and both cheeses. Continue to stir until the cheese melts and the sauce is smooth.

  3. Remove the sauce from heat and stir in the cottage cheese.

  4. Add the noodles to the baking dish and pour your cheese sauce over top. Stir to make sure the sauce is covering all the noodles. Top the dish with a sprinkle of extra cheese, and sprinkle paprika generously overtop.

  5. Bake for 45 minutes until bubbly and golden on top. Enjoy!
