Harvest is a busy time of year around the farm. We just wrapped up the 2024 corn harvest and its a big relief with the wet season upon us!
I find myself looking for this recipe every year when the leaves start changing, and we start to crave warm flavours! Harvest Loaf ticks all the boxes when it comes to a harvest time snack with apples, pumpkin and cinnamon.
I recently started substituting craisins for raisins in the recipe and its my favourite! Give it a try if you have them on hand.
We love to eat this loaf with a generous spread of butter or peanut butter!
Ingredients
All purpose flour
Baking soda
Baking Powder
Salt
Cinnamon
Nutmeg
Ginger
Brown sugar
White sugar
Pumpkin puree
Apples, grated
Chopped walnuts or pecans
Raisins, or craisins
Eggs, beaten
Vanilla
Instructions

Preheat oven to 350. Line a loaf pan with parchment and set aside. If you prefer not to use parchment, grease the baking pan with parchment.

Whisk together the dry ingredients; flour, baking soda, baking powder, salt, spices, and both sugars. Set aside.

Using paper towel or a tea towel, squeeze the excess liquid out of the shredded apple.

Next, Add in the melted butter, pumpkin puree, shredded apple, milk and beaten eggs. Mix with a wooden spoon or spatula until just combined.

Fold in the nuts and raisins. Pour the batter into the loaf pan and bake at 350 for 55 to 60 minutes, or until a knife inserted comes out clean.
