Dill Pickle Slaw

If you like a salad that’s big on crunch and texture, look no further!  This Dill Pickle Slaw is for you! Its a switch up from regular coleslaw and uses both pickle juice, grated pickles, dill and cucumber.

It can be used as a side salad or a main, served with grilled chicken!  It has a yogurt based dressing, and I like to top it with our Grass Fed Heritage Feta, but you could easily swap in our Grass Fed Heritage Cheddar Cheese.

Don’t skip the Crispy Fried Onions to top the salad. You can buy these in a bag at the grocery store – normally  near the condiments or where you would buy croutons. They are so good!

Note: because there is so much moisture in this recipe its best served fresh. I like to dress the salad right before serving.

Ingredients
6 cups

Coleslaw Salad (For ease, I buy a pre shredded mix)

1/3 cup

Shredded or diced Dill Pickles

1/2 cup

Diced cucumber

DRESSING
1/2 cup

Donia Farms Natural Yogurt

2 tsp

Dried dill

1/2 tsp

Garlic

1/4 tsp

Pepper

2 Tbsp

Dill pickle juice

Salt, to taste

TOPPING

Crispy Onions, You can buy these in the condiments aisle usually near the croutons.

Instructions
  1. Make the Dressing: In a small bowl add the yogurt, dill, garlic, pepper and dill pickle juice. Whisk the mixture until smooth, then set aside.

  2. To your salad bowl, add the cole slaw mix, the diced cucumbers and pickles. Top with the dressing and mix to combine.

  3. Top with crispy onions and cheese. Serve and Enjoy!
