I started making this Cucumber Feta Salad as a fresh side dish. It’s great with chicken for lunch or dinner!
Don’t skimp on the Feta Cheese! I use at least 3/4 cup.
If you want to make it ahead, you can prepare it fully with the dressing, except do not add the avocado until just before serving.
Ingredients
Olive Oil
Apple Cider Vinegar
Mustard
Clove garlic, minced
Dried onion
Salt, to taste
Pepper, to taste
Cucumber, chopped
Red onion, small diced
Fresh dill
Donia Farms Feta Cheese, crumbled
Avocado, diced
Instructions

Whisk together the yogurt, oil, vinegar, mustard, garlic, onion flakes, dill, salt and pepper in a small bowl. Set it aside.

Combine the cucumber, onion, feta, and avocado in a salad bowl. Note: if you are not eating the salad right away, do not add the avocado until right before eating.

Pour dressing over the salad and toss to coat. Top with additional feta, salt and pepper if desired. Eat and enjoy!
