Cucumber Feta Salad

Category: Lunch & Dinner
Best for: Salad
Serves: 4 - 6 people

I started making this Cucumber Feta Salad as a fresh side dish. It’s great with chicken for lunch or dinner!

Don’t skimp on the Feta Cheese! I use at least 3/4 cup.

If you want to make it ahead, you can prepare it fully with the dressing, except do not add the avocado until just before serving.

2 Tbsp

Olive Oil

1 Tbsp

Apple Cider Vinegar

1 tsp

Clove garlic, minced

1/2 tsp

Dried onion

Salt, to taste

Pepper, to taste

4 cups

Cucumber, chopped

1/4 cup

Red onion, small diced

1/3 cup

Fresh dill

3/4 cup

Avocado, diced

  1. Whisk together the yogurt, oil, vinegar, mustard, garlic, onion flakes, dill, salt and pepper in a small bowl. Set it aside.

  2. Combine the cucumber, onion, feta, and avocado in a salad bowl. Note: if you are not eating the salad right away, do not add the avocado until right before eating.

  3. Pour dressing over the salad and toss to coat. Top with additional feta, salt and pepper if desired.  Eat and enjoy!
