Crispy Prosciutto Feta Salad

This salad is going to be your new favourite. Its everything you’re looking for in a salad, salty, little sweet, crunchy, refreshing and savoury. The key to this recipe of course is our Heritage Feta Cheese!

Our feta is not like most, its less salty! And that makes it a perfect pairing with crispy prosciutto. This salad has apples, cucumber, onion, nuts, seeds, and even some creaminess from the avocado. The dressing is just a handful of ingredients, too!

Ingredients
DRESSING
1/2

Olive oil

2 Tbsp

Apple cider vinegar

2 Tbsp

Soy sauce

2 cloves

Garlic, minced

1/2 tsp

Pepper

1/2 Tbsp

Dijon mustard. (regular mustard is also good!)

SALAD
12 - 16 pieces

Prosciutto

8 - 10 cups

Spring Mix

3/4 cup

Crumbled Donia Farms Feta Cheese

1 cup

Chopped cucumber

1/2 cup

Chopped Apple

1/8 cup

Finely chopped onion

1/4 cup

Pumpkin seeds (sunflower also good!)

1-8 to 1/4 cup

Chopped walnuts

Avocado, sliced for topping

1/2

Apple, sliced  for topping

Instructions
  1. Preheat oven to 350. Line a cookie tray with foil and set it aside. Next, take each slice of prosciutto and twist it  from top to bottom to make a long strip. (If your slices are big, you can take a half piece cutting it length wise and twist that.) Place each of the pieces on the foil and bake for 20 – 22 minutes, or until crispy. Make sure to flip after about 10 minutes of cook time.

  2. While the prosciutto bakes, make the dressing. Add all dressing ingredients to a small bowl. Using an immersion blender, blend all ingredients until it is creamy and well combined. Alternatively, you can use a regular blender or shake vigorously in a jar.

     

  3. Chop and prep all the salad ingredients. Add all the ‘fixings’ to the bowl, reserving a bit of feta and the sliced avocado and apple for topping.

  4. Once the prosciutto is done, allow it to cool until crisp. Then, cut it into 1 inch pieces. Right before serving,  toss the salad with the dressing. I usually have some remaining and do not use it all. Then add in the prosciutto pieces. and toss again.

  5. Lastly, arrange the avocado and apple slices in a circle on the top. Top with the remaining feta.  This step is definitely not needed but makes for the prettiest salad and just takes a couple extra minutes.
