Christmas Morning Wife Saver

Every Christmas my mom used to prep the Best of Bridge Christmas Morning Wife Saver on Christmas Eve. We would wake up to the smell of breakfast the next day!  Its easy, delicious and best of all you can prep it the night before!  Now that I’m a mom, I appreciate an easy breakfast more and more.

Well, this is recipe based on that. Instead of the ham that best of bridge uses, we use an Italian sausage. (I use mild but go for hot if you don’t have little kids!) Plus a few other changes!

Make Christmas morning (or any morning!) easy! Give this dish a try!

Ingredients
16 slices

White bread, crust removed.

500 gr - 1 lb

Mild Italian sausage, use closer to 1 lb if you would like!

1/2 cup

White onion, diced

8

Eggs

1 1/2 cups

Donia Farms Cheddar Cheese, shredded

3 cups

Donia Farms Milk

1 tsp

Dry Mustard

1/2 tsp

Pepper

1/4 - 1/2 cup

Green pepper, diced (optional)

1 1/2 cups

Corn Flakes, crushed

1/2 cup

Donia Farms Sea Salted Butter, melted

Fresh Chives, for garnish

Instructions
  1. Grease a 9 x 13 pan with butter and set it aside.

  2. In a frying pan, saute the ground Italian sausage until fully cooked. Remove the meat from the pan, leaving the grease in the pan.  Add the onion and green pepper to the grease and saute until tender. If you do not have much grease left, add a bit of butter to saute.

  3. Line the bottom with a single layer of bread. (usually takes about 8 pieces with crust removed) Try to make sure there is not much.

  4. Spread the onion and pepper evenly over the bread layer. Do the same with the Italian sausage. Next, sprinkle the cheese creating an even layer. Use more or less cheese to cover the meat well.

  5. Repeat the bread layer. Use small pieces to fill in gaps where needed.

  6. In a small bowl whisk the eggs, milk, pepper and dry mustard together. Pour the mixture over the entire dish, making it as even as possible. Cover and place in the fridge over night!  If you are doing this the day of, let it rest for 1 hour before cooking.

  7. In the morning, preheat the oven to 350. Melt the butter and pour it over the bread evenly. Next, Add the crushed cornflakes in a layer over the bread. Use more or less to cover the bread. It does not need to be very thick.

  8. Bake for 1 hour., then garnish with fresh chives. Allow to rest for 10 minutes before serving!
