Simple Summer Salad

Fresh, simple, and made to show off our feta. This salad is everything I love about summer — crisp textures, bright flavours, and that creamy, salty bite of Donia Farms Feta in every forkful. The dressing couldn’t be easier, just a quick mix of pantry staples that lets the freshness do the talking. It’s the kind of salad that feels effortless but still impresses, whether you’re making lunch at home or bringing a dish to share.

Ingredients
DRESSING
1.5 Tbsp

Olive Oil

1.5 Tbsp

Lemon Juice

0.5 Tbsp

Honey

Pinch, Salt

Pinch, Pepper

SALAD
8 cups

Spring Mix

2/3 cup

Snap Peas, chopped

1/3 cup

Fresh Basil, chopped

1/4 cup

Pecans, chopped

Medium Radishes, finely sliced

4-5

Figs (fresh or dried will work), sliced

Instructions
  1. Prepare the salad dressing; whisk together the olive oil, lemon juice, honey, salt and pepper and set it aside.

  2. Chop the snap peas, basil, pecans, radishes, figs, and feta.

  3. Add all ingredients to a salad bowl and toss with the desired amount of dressing and serve!

  4. Note: This salad keeps well in the fridge if you make it ahead of time!
