This pudding is made with just eight ingredients that you probably have in the pantry, including our Heritage Grass Fed Milk and Butter!
My son, Arie, especially loves chocolate pudding! Actually, even my husband, Dave, who normally doesn’t like pudding enjoys this treat. This is a super quick recipe that makes the perfect amount for our family (5 – 6 dessert sized portions).
Make sure to top it with lots of fresh berries and whipped cream! I especially like that this is a make ahead dessert. If I have a spare 20 minutes in my day I can whip this up for a special after dinner dessert that kids and adults love!
PS Don’t be fooled by the length of the directions. This recipe is so quick and once you have made it once you will have it memorized!
Ingredients
Granulated sugar
Cocoa powder
Salt
Corn starch
Eggs
Vanilla extract
Instructions

In a heat proof bowl, whisk together the eggs and cornstarch for 1 minute. Next add in about 1/4 cup of milk. Whisk well until smooth and set aside.

Next, add the sugar, cocoa powder, salt, and remaining milk to a pot over medium heat. Whisk until well combined and the mixture has almost come to a boil, but not quite. Then, remove from heat.

Add the chocolate milk mixture to the egg mixture very slowly, whisking well as you do. You cannot add it too quickly and must continue stirring so you do not cook the egg. (When you slowly add 2 ingredients together of different temperature so they both come to the same temperature this is call tempering)

Next, add the mixture back to the pot and return to the stove. Continue to whisk over medium heat until the mixture thickens. Reduce to a simmer once it comes to a boil and whisk until a pudding thickness is reached. This will take a couple minutes.

Remove from heat and stir in butter and vanilla. Separate into 4 to 6 small bowls. To avoid a film developing on the top as the pudding cools, place a piece of cling wrap directly on top pf the pudding it so no air reaches it.
Allow to cool slightly and serve warm or allow to cool completely in the fridge and serve cold. (My kids prefer cold but sometimes cant wait for it to fully cool!) When serving, top with whipped cream and your favourite berries. Enjoy!
