Cowboy butter is a versatile savoury butter compound used as a dip or topping for steak or roast, but it would be equally good with chicken or even prawns. It’s a little bit of everything: salty, tangy, smokey, full of fresh herbs and has a bit of a kick with a pinch of cayenne. I have been playing around with different versions, and this one is our favourite!
Ingredients
Donia Farms Sea Salted Butter, softened.
Dijon mustard
Lemon juice
Smoked Paprika
Chilli Powder
Red Chilli Flakes
Cayenne (Optional)
Cloves minced garlic
Chopped green onion
Fresh parsley
Fresh thyme
Cilantro (Optional)
Pepper
Salt, to taste
Instructions

In a small bowl, combine all ingredients until well combined. Store the butter in an airtight container in the fridge, or use parchment paper to shape the butter into a log and wrap it with cling wrap.

To serve your Cowboy Butter, slice it cold or at room temperature and use it on top of your meat. It melts deliciously on a warm steak! Or, you can do as we like and melt it, then use it as a dipping sauce!
