Koek is a Dutch recipe staple! My mother-in-law grew up in the lower mainland with Dutch immigrant parents, and this is her mom’s original recipe! It was always served at coffee time with a generous spread of butter.
This recipe can be made in a standard 9 x 5 loaf pan or a long loaf pan! My mother in law has a long 4 X 14 inch loaf pan she uses for the recipe, and I think it’s my favourite. She reduces the baking time to about 50 minutes if you have this sized ban.

All spice

Syrup or honey

Preheat oven to 350 degrees. Grease a loaf pan and set aside.

Whisk together the flour, sugar, baking powder, baking soda, allspice, cloves and cinnamon in a medium bowl.

Add milk, butter and syrup or honey in a separate small bowl. Heat the mixture in the microwave until it is smooth but not hot. Add the wet ingredients to the dry ingredients and mix until just incorporated.

Add to the loaf pan and bake for approximately 60 minutes or until a toothpick inserted comes out clean.
If you are using a long pan, you can reduce bake time to approximately 50 minutes.
