These egg bites are healthy and satisfying! Make up a batch for breakfast on the go all week long. We love this combo of roasted pepper, spinach and our Grass Fed Feta Cheese!
Ingredients
Red Bell Pepper
Olive oil
Garlic, minced
Lemon Juice
Spinach
Eggs
Donia Farms Grass Fed Milk, 3.25% or 2%
Salt
Red pepper flakes (optional replace with pepper)
Instructions

Preheat oven to a high broil. Core the pepper and cut into quarters. Brush with oil and broil to roast the pepper. Keep a close eye and broil until soft and lightly charred. Allow to cool and then cut into bite sized pieces.

Preheat oven to 375. Lightly grease muffin tin with butter and set it aside.

In a medium bowl, whisk together the eggs, milk and salt and set aside.

In a sauce pan over medium heat, melt the butter. Add the garlic, red pepper flakes and lemon juice and cook until fragrant. Add in the spinach; saute for 2 minutes or until spinach is wilted, then remove from heat.

Next, take the milk and egg mixture and divide it evenly among 12 muffin cups. Next, divide the spinach mixture and cut bell pepper evenly to the muffin cups on top of the egg mixture. Lastly, add the crumbled feta evenly to the muffin cups.

Bake at 375 for 25 minutes, or until the egg is set and tops are just beginning to brown. Enjoy!
