Roasted Red Pepper Dip

This dip is low on ingredients and high on flavour! Enjoy it as a dip for fresh veggies, crackers or a spread for sandwiches. It is yogurt-based and requires 1 cup of our Natural Heritage Grass Fed Yogurt. Adding goat cheese gives it additional creaminess, and it’s simply seasoned with fresh dill, garlic,  salt and pepper.

If you prefer a thicker dip, increase the yogurt amount to 1 1/4 cups and strain the yogurt for at least an hour before mixing. Add the yogurt to a  colander lined with paper towel, then place over a bowl to strain.  Use the strained yogurt as directed in the recipe!

Ingredients

Red pepper

2 cloves

Garlic (2 – 3 tsp minced)

1/4 cup

Fresh dill

3/4 cup

Goat cheese

1/2 tsp

Pepper

1/2 tsp

Salt

Instructions
  1. Roast the Red Pepper: Brush Pepper with olive oil and roast in oven under broil. Pay special attention to rotate the pepper to char and roast on all sides.

  2. Once the pepper is roasted, cut off the stem and discard the seeds.  If it is overly roasted you can pick off the black charred pieces.   Add the roasted pepper, yogurt, garlic, dill, goat cheese, salt and pepper, and puree until smooth.

  3. Transfer to a serving bowl and place in the fridge. Allow chilling for 2 hours up to overnight. The chilling will help thicken the dip.

  4. Enjoy with fresh vegetables, on crackers, or a spread on sandwiches!
