Creamy Cauliflower Rice
This veggie dish is rich, creamy, and delicious. Have a kid thats a little particular about their food? The texture of this recipe does an excellent job of hiding the cauliflower for those finicky eaters.

  • 8Cups Chopped Cauliflower
  • 4Cups Vegetable Broth
  • 2Cups Water
  • 1/2 Cups Donia Farms 3.25% Grass-Fed Milk
  • 1.5 Cups Brown Rice
  • 1Teaspoon SaltMore or Less to taste
  • 2Tablespoons Butter
  • 7Cloves garlicMince the Garlic
  • 1/2Cup Mozzarella CheeseMore to taste
  1. Start by cooking the rice according to the instruction of the rice
  2. In a large pot combine Water and Vegetable broth. Bring the pot to a boil then add the Cauliflower and cook until it is tender.
  3. Transfer the Cauliflower to a food processor or blender, add the milk to the blender and blend until a creamy consistency. Season with salt as needed.
  4. Pour the cauliflower puree over the cooked rice and combine
  5. In a large nonstick skillet, melt the butter and add the garlic, saute over low heat until the garlic releases its fragrance. Add the creamy rice and cauliflower mixture
  6. Stir butter and garlic into the rice and cauliflower mixture until it is thoroughly combined
  7. You can either top it with the cheese or stir it in. Season as you see fit with Salt and Pepper
